In Acts 6 (Mike says Acts 5 but means 6), seven men are appointed to handle the widows' food ministry so apostles can focus on prayer and teaching. Though they're never called 'deacons' in the passage, Mike thinks they were functionally deacons. The apostles retained prayer (leading prayer) and teaching -- elder-type functions. Everything else falls to deacons: food ministry, hospitality, children's ministry, practical needs, sound/tech, website maintenance, etc. Stephen's role included real leadership. The deacon role has variety.
