The Ethiopian eunuch in Acts 8 appears to be Jewish or a proselyte (he was in Jerusalem to worship and had Isaiah), so this is still not a full Gentile conversion

Winger notes that even this geographically distant person had a Jewish connection (worshipping in Jerusalem, reading Isaiah). The Law of Moses is not brought up in Acts 8 in any direction.
