Three factors make the disciples' belief in Jesus's deity extremely unlikely on any hypothesis other than genuine encounter: (1) Jewish expectation of a non-divine Messiah — Numbers 23:19 says God is not a man; (2) Jewish expectation of a triumphant (not crucified) Messiah — the Messiah was expected to defeat Rome and restore the Davidic kingdom; (3) The embarrassment of crucifixion — second-century Jewish philosopher Trypho (in dialogue with Justin Martyr) argued the curse of crucifixion (Deuteronomy 21:23) meant a crucified figure could not be the Messiah. Given that neither a divine nor crucified Messiah was anticipated, the disciples' belief in both had to arise from the events of Jesus's life, death, and resurrection.
